Valentine's day healthy citrus pie.

Love is the air, what about have a healthy pie for dinner to share with your loved ones?

Who doesn't love a homemade dessert? A lime pie with a crust layered, gluten free, low sugar and with a lot of yummy nutrients.


Let's make it easy and go to the recipe.

Ingredients:


1 cup of oat flour (gluten free is optional)

1/2 cup of flaxseed

1 cup of walnuts (blend to make a flour) or 1 cup of almond flour

1 tbsp of coconut sugar

1/2 cup of coconut oil

3 tbsp of water or more if needed


Filling:


1/4 cup of lime juice (about 1 and half lime)

1/3 cup of coconut sugar

6 tbsp of coconut oil (cold)

4 yolk eggs


Toppings:


Strawberry; blueberries or raspberries


Directions:


Step 1

Preheat oven to 380 degrees F or 200 c.

Mix all the dry ingredients together in a bowl. Add the coconut oil and mix well. Add the water little by little and mix with hands. The dough should be able to make a ball in your hands.


Step 2

Press the batter in a small spring form pan or silicone pan until it's even (pressing well will help the crust do not break). Drill little holes with a fork. Place the pan in the oven for about 20 to 25 min or until it's brown.


Step 3

In a bowl stir the yolks, lime juice and sugar until it's smooth. Cook this mixture in water bath for 10 to 15 min or until is creamy and cooked. Removed from oven and add the cold coconut oil, spoon by spoon in a small pieces, mix well until well incorporated.


Step 4

Filling the crust with the mixture and place in the fridge for at least one hour before serve. Add some strawberries, blueberries or raspberries as you wish.
