Sunday gluten free banana pancake recipe.

Who doesn't love pancakes? Sunday's mornings are my favorite time to make pancakes, and I can tell you one thing - you can enjoy it without guilty. I'm addicted to pancakes and I always use fresh fruits and gluten free flours to make mine.
I posted it on my instagram stories (if you don't follow me yet, here it's @vfmendes) and you guys asked me the recipe. So let's cook banana pancakes together.

Ingredients:
1 banana (ripped)
2 eggs
1/4 cup of almond milk, coconut milk or oat milk (for no dairy)
2 tbsp of almond flour
2 tbsp of coconut flour or oat flour (gluten free)
1 pinch of salt
cinnamon
1 tsp of vanilla extract
1 tsp of baking powder
Directions:
Step 1:
In a bowl smashed the banana and mix with the eggs, milk and vanilla (set aside).
Step 2:
In other bowl mix the flours, salt, cinnamon and baking powder. Whisk the dry ingredients with the wet ingredients.
Step 3:
Heat a large skillet (nonstick or cast-iron) with some coconut oil or butter. For each pancake, spoon 2 to 3 tablespoons of batter onto skillet, using the back of the spoon to spread batter into a round (you should be able to fit 3 to 4 in a large skillet).
Step 4:
Cook in a low heat, until surface of pancakes have some bubbles and a few have burst. Flip carefully with a thin spatula, and cook until browned on the underside. (banana pancakes take more time to cook than conventional pancake, be patient).
Toppings:
I personally love adding toppings to my pancakes, opt for fresh fruits as blueberries and raspberries and some fat as peanut butter or almond butter and make it taste even better.
